Roasted Spaghetti squash is served cold, tossed with a ginger lime vinaigrette, cumin, farm arugula and kalamata olives. It is plated in a ring. The center is filled with an aerated fromage blanc that we make in house and then the whole plate is dusted with espellette pepper.
