Pozole (white hominy, braised pork, chili broth) 12

Pozole is a traditional soup of Mexico which is served with hominy, a meat component (usually pork or chicken), and chilies.  There are seasoning variations on this dish, the one constant is the use of hominy.

Our pozole:
Braised lean pork- pork meat is from the back leg of the pig and braised in water.
Hominy- corn kernels without their hull
chili paste- combination of (dried) arbol, ancho, guajillo peppers, & tomato
These three ingredients are combined and seasoned with salt and lemon juice.

Soup is served with bullets of shredded cabbage, diced fresh lemon, dried oregano, diced yellow onion, fresh cilantro, and crispy housemade fried corn tortillas.  This set up is sent out to guest with a spoon prior to delivery of the pozole.
