-ciabatta is made into hand torn croutons which are lightly toasted, mixed with a variety of local heirloom tomatoes cut in different irregular shapes, basil and Texas tarragon (from the garden), and dressed with salt and a tomato vinaigrette. The vinaigrette is made from tomatoes, EVOO, and red wine vinegar

-Parsley puree on the plate is half raw, half blanched parsley pureed with EVOO
