Crepinette: small flattened sausage wrapped in caul fat instead of being stuffed into casings
caul fat: thin membrane which surrounds the stomach of some a pig
Ground pork meat & fat mixed with soy sauce, fish sauce, lemongrass, coriander, lemon zest, parsley, and marjoram.
The crepinette is pan seared with butter, finished in the oven.
Savory cabbage is seared and served with fried capers, lemon juice and creme fraiche.
Note - there is a very small percentage of soy in the crepinette. This is important to note when speaking to guests about gluten allergies.
