****New Bar Products****

FERNET VALLET
This bitter liqueur originates from the 1860s, when Henri Valley left France for Mexico, staying behind to make booze even after the era of French colonialism faded away. This spirit is still made, in Hidalgo, according to the original, 150-year-old recipe.

Fernet-Vallet Aperitivo-Liqueur – Made from aromatic plants, roots and spices including cinnamon, clove, Quassia wood, gentian root, and cardamom. Impossibly dark. Pretty cinnamon/allspice nose. An intensely herbal, woodsy digestif, FernetVallet enjoys popular usage throughout Mexico in the preparation of both classic and modern cocktails. On the palate, extremely bitter — considerably more so than Fernet Branca — and very wood-focused, with dark cloves coming more into the forefront. 70 proof

PIMM’S BLACKBERRY & ELDERFLOWER
This is based on Pimm’s No:6 Vodka Cup with additional flavours of blackberry and elderflower. Pimm’s is well-known for having a history of a variety of products made with different bases (No.’s 1 to 6), but innovation with additional flavours is somewhat new.

Pimm’s Special Blackberry & Elderflower Edition is bottled at 20% ABV (lower than the 25%ABV of the No:1 and No:6 cups).

HIGH WEST – DOUBLE RYE
The High West Distillery in Park City, Utah prides itself on creating handcrafted, small batch spirits. They are Utah's first distillery since 1870 and the world's only ski-in gastro-saloon. High West Double Rye Whiskey is the combination of two straight rye whiskeys - a bold, peppery two year old with a 95% rye and 5% barley mashbill, and a smooth, refined sixteen year old with a mashbill of only 53% rye and 37% corn. Named a "must-try for rye whiskey aficionados" by John Hansell of Whisky Advocate, High West Double Rye opens strong and spicy, but soon gives way to complex notes of mint, clove, cinnamon, licorice root, pine nuts and dark chocolate. A surprising note of gin botanicals merges with an undercurrent of caramel, vanilla and sweet corn on the finish.

Alcohol by Volume: 46%

AYLESBURY DUCK VODKA

Aylesbury Duck is made from a soft white winter wheat sourced directly from local farmers in the Western Rockies of Canada (near Calgary).

We ship our vodka at 96.5% proof to our bottling facility in Northern California where we add water to bring Aylesbury Duck to its final proof of 80 (40% ABV). There are a few reasons for this: 1) Our friends at DomaineCharbay Distillers add the water for us. We have always been a huge fan of their work and trust their palates explicitly. 2) The water they use comes from a well in Mendocino county and it is exceptionally 3) It reduces our carbon footprint. 4) It tastes really good.

TASTING NOTES: Noses clean and crisp of toasted bread and crackers. Tastes clean, grainy, with a fine balance of sweetness and lemony acids. Peppery finish that is lush and very long

TEQUILA CABEZA

A TRUE GROWERS TEQUILA TEQUILACABEZA - THE VIVANCO FAMILY HAS BEEN CULTIVATING AGAVE IN THE LOS ALTOS REGION OF JALISCO FOR FIVE GENERATIONS. THEY BUILT THEIR DISTILLERY EL RANCHITO ON THE EDGE OF THEIR 800-ACRE MOUNTAINSIDE FIELD IN ARANDAS, WHERE THEY NOW HAVE BEEN TEQUILEROS FOR 3 GENERATIONS.

The Jimadores pick the agaves at seven to nine years of age. Fermentation of the mosto is kick started with champagne yeasts, and fermentation takes place during the winter months – the cooler temperature allows for an extended mash period giving fruitier flavors. Distillation occurs in two separate copper pot stills. The destrozador still first produces the ordinario at 20-22% ABV, which is filtered, and the second distillation, in the rectificator still, produces tequila at 55-56% ABV. There is no filtration after the second distillation. Distilled water is added to bring it down to 43% ABV (86 proof).

Tequila Cabeza is made from 100% estate owned agave that is grown in the Los Altos region in Arandas. The agave are grown by the Vivanco family, who have been cultivating agaves on their 800-heactare mountainside land for five generations, and handpicked by the Jimadores at seven to nine years of age when the agave has a sugar content of 23-28%. It is grown without pesticides on land that has been used for the cultivation of agave for over 100 years.

TASTING NOTES: TOASTED SEEDS AND SPICES SUCH AS CORIANDER SEEDS, WITH A LOVELY FRUITY TEMPERAMENT. AN EASY, SOFT AND FRUIT DRIVEN TEQUILA.
