Components of Dish:
-Mushroom mix is sauteed with thyme and shallots, picked up with arugula folded in
-Corn puree - corn is sautéed with thyme and pureed with corn stock made from the cobs and parmesan cheese. Its finished with parmesan oil made from the rind of the cheese
-Poached egg is finished with EVOO, salt and black pepper
-Pickled ground cherries to finish
