Onion - shallot brunoise

Egg - duck egg yolk

Components of Dish:

2oz diced beef mixed with brunoise shallot, brunoise pickled carrot (JBG), pickled carrot puree, rough chopped pea tendrils, and salt

The baguette is cut on a slight bias and grilled and dressed with EVOO. The tartar is plated on top with duck egg yolk (which has been circulated sous vide @ 134F for 1 hour) is dotted on top via squeeze bottle
