Pancetta (strawberry, fig leaf).....8

What a gorgeous addition to the charcuterie menu! Someone smarter than me once said "Good things come to those who wait." This might be the definition of the phrase. Aged 8 months, this pancetta is salty but delicate, The fig leaf oil and bronze fennel really mellow the dish out. Just let it rest on the palate for a moment and contemplate the flavor. You will be glad you did.

Allergies & available subs (if any):

gluten (bread that comes with it)

Components of dish:

Pancetta - cured, rolled and dried pork belly roughly 8 months

fig leaf oil, bronze fennel from the Contigo garden, Strawberry preserves and baguette toast similar to the pork liver pate.
