Lamb Liver (terrine, roulade, cauliflower, pickled mustard seeds) 7

Lamb liver - We use local raised Dorper lamb

The Dorper is a South African breed of domestic sheep developed by crossing Dorset Horn and the Blackhead Persian sheep. The breed was created through the efforts of the South African Department of Agriculture to breed a meat sheep suitable to the more arid regions of the country. It is now farmed in other areas as well, and is the second most common sheep breed in South Africa.

Country style terrine - lamb liver and course ground pork, the terrine is garnished with a brunoise of sweet potato and pecans.

Roulade - emulsified lamb liver and pork fat garnished with pieces of blood sausage. The roulade is wrapped in bacon and sous vide.

Salad - kale & arugula dressed with pickled red onions and pickled mustard seeds.

Mustard seeds - brown and yellow mustard seeds pickled with rice wine vinegar and Buffalo Trace bourbon.

Cauliflower puree - puree cauliflower with brown butter served as a spread under the salad and a quenelle on the side.

A small amount of powdered candied lemon peel is served along side this dish.

Dish is served with sliced toasted baguette.
